Ullucus tuberosus


Native to the Andes, Ullucus tuberosus is a trailing perennial herb cultivated at high elevations for its edible tubers. Fleshy stems carry smooth heart-shaped leaves, while small flowers arise on slender spikes. The waxy tubers vary widely in shape and may be yellow, orange, red, pink, or mottled.
