This aromatic culinary sage from the mint family is celebrated for its pungent edible leaves and is a native to the Mediterranean region. Its adaptability has allowed it to naturalize globally. The flowers, appearing in spikes, showcase a palette of purple, pink, or white, drawing the attention of bees, butterflies, and hummingbirds, while also producing nutlet fruits. Essential oils derived from this plant contain up to 2.5% of thujone and borneol, substances that contribute to its distinct aroma and therapeutic properties. Commercially, the essential oil of sage, particularly the variety known as Dalmatian sage oil, is highly valued and primarily produced along the Adriatic coast. Photographed in Bogotá, Colombia.
