Native to the central Andes, Tropaeolum tuberosum is a climbing perennial herb cultivated for its edible underground tubers. Slender stems carry rounded, deeply lobed leaves. Nodding flowers have long red-orange spurs and yellow lower petals, creating a strong two-toned appearance. The tubers occur in many colors and remain an important Andean crop.
