Pithecellobium dulce
A tree native from Mexico to northern South America. It produces greenish-white, fragrant flowers that coil into compact shapes, and these flowers give way to pods. When the pods ripen, they turn pink and split open to reveal edible, sweet, and sour pulp surrounding shiny black seeds. This pulp is consumed raw in several countries and is also used to make refreshing beverages​. The black seeds are used by artisans. Photographed in Cartagena, Colombia.
