A perennial, low-lying edible herb native to Europe has colonized a wide range of habitats globally. The foliage is edible. The young, tender leaves along with the flower stems and buds can be steamed or sautéed, similar to asparagus, while the roots have found use as a coffee substitute when roasted and ground. It has been utilized in herbal medicine for treating kidney and urinary tract issues, gall bladder problems, constipation, rheumatism, and liver ailments.
