Helianthus annuus flower head with orange-and-yellow ray florets and yellow disk florets surrounding a dark center

Helianthus annuus

Native to the southwestern United States and Mexico, it is an annual herb widely cultivated for food and ornamental use. What appears to be one large flower is a head of many small flowers: outer ray florets surround the fertile disk florets, which develop into the familiar seeds. Young buds track the sun, while mature open heads generally face east. Garden cultivars vary greatly in height, branching and flower color.

The edible seeds are eaten raw or roasted and pressed for cooking oil. They are also used in livestock feed and bird food. Cultivars including ‘American Giant’ and the double-flowered ‘Teddy Bear’ hold the Royal Horticultural Society’s Award of Garden Merit. Photographed in the department of Quindío, Colombia.
