Amaranthus hypochondriacus (Kiwicha)

Native to Kansas, central Mexico, Mexico Gulf, northeastern Mexico, northwestern Mexico, and southwestern Mexico and nearby regions, this is an herbaceous plant in the Amaranthaceae family. Origin to Central and South America. It is believed to have been a significant crop for the Aztecs and Incas. The leaves, seeds and flowers are edible. The seeds are tiny and packed with essential nutrients, including protein, fiber, vitamins, and minerals. They have a mild, nutty flavor and is commercially cultivated.
